As the Seattle World's Fair Grounds Become The Seattle Center
Food services on the Seattle Center grounds will retain the same international quality and variety of the Fair. The National Guard Armory, Food Circus during the Fair, has been obtained from the state, and extensive remodeling is underway.
Biggest change is the installation of the Coliseum Bubbleator as a mass elevator servicing all three floors of the Food Circus. Two new street-level entrances will be cut in the north and west sides of the building.
"We plan on considerably more moderate food prices here than during the Fair," Nick Jorgensen (above), Foods Director, said. By floor, the Food Circus will contain:
FIRST FLOOR. To be known as the International Boulevards, with a Seattle business group as "master concessionaire." Space here will be sublet to 50 operators for shops, services, a television broadcast area and free entertainment.
SECOND FLOOR. The Food Circus. Approximately 45 shops, including such holdovers as the Barbecue Pit, Luigi's Italian Kitchen, the Village Cafe (with homemade pies), Jilg's food shop (corned beef sandwiches, ham and sausage), Bargreen's Colombian Coffee, Horluck's (Danish Franks and Ice cream). Seating for 1,000 will be available, and free entertainment will be provided.
Returning also are such Fair favorites as the Belgian Waffle shop, Smitty's Pancake House and the Danish open-faced sandwich shop. Plus, of course, Mexican food, Chinese food, a Polynesian seafood bar (with curried and poached dishes), a full-buffet smorgasbord with beer, hamburgers and hot dogs.
THIRD FLOOR. The International Bazaar. Feature restaurant here is the Swiss Chalet (below), featuring such Swiss food specialities as cheese fondue and carbonade, a stew cooked with beer. The restaurant will also have a handicraft shop with Swiss merchandise and entertainment. An import area will feature international shops and merchandise, with more than 20 shops already signed for space.
On the grounds, major restaurants include:
PLAZA RESTAURANT. Charcoal-broiled steaks and seafood. Cocktails.
FIESTA RESTAURANT. Southern-fried chicken. Cocktails.
TIVOLI HAUS. German and Scandanavian food, beer. Operated by David L. Cohn, Seattle restauranteur. [sic] 1963 summer season only. Entertainment.
IVAR'S FISH BAR. In the amusement area.
In addition, a food operation in the former fashion pavilion (Building 55) will cater to youngsters, in connection with a nursery and child-care center.
